Hungry the other day, I went to Trader Joe's to buy a salad. They had a spinach salad with Carrot Miso dressing. It was delicious, so I had to try to make the dressing at home. Here was my recipe:
5 big carrots
1/2 cup olive oil
1/4 cup safflower oil
1/2 cup rice vinegar
1 inch ginger root
1/4 medium red onion (the ingredients list said Shallots, but I didn't have any shallots)
2 tablespoons light miso
1 tbsp sesame seeds (as the ingredients list called for sesame oil, which I also didn't have
salt to taste (I didn't add any)
water to thin
mixed it all up in my Vitamix!
Left sort of thick, it makes a good sandwich spread, too! Use less oil and no water for that.
